A smooth, creamy dip made with chickpeas, tahini, lemon, and garlic. Perfect as mezze, a spread, or a side dish.

Ingredients

  • 1 can chickpeas (400g), drained and rinsed

  • 3 tbsp tahini (add more for creamier texture)

  • 2 tbsp lemon juice, fresh

  • 1 garlic clove (2 if you want stronger flavor)

  • 4 tbsp olive oil

  • ½ tsp salt

  • 1–2 tbsp ice-cold water (important for smooth texture)

  • Paprika or cumin (optional garnish)

  • Olive oil for serving

Preparation

Step 1: Prepare the chickpeas

  1. Drain and rinse the chickpeas.

  2. Optional but recommended for extra smooth hummus:

    • Peel each chickpea by pinching lightly (takes 3 minutes).

Step 2: Make the base

  1. Add lemon juice and garlic to the blender.

  2. Blend 20–30 seconds until garlic is completely crushed.

  3. Add tahini and blend again until creamy.

    • This step makes your hummus EXTRA smooth.

Step 3: Blend the hummus

  1. Add chickpeas, salt, and olive oil.

  2. Blend for 1 minute.

  3. Add ice-cold water one tablespoon at a time.

    • This makes the hummus fluffy and pale.

  4. Blend until completely smooth.


Step 4: Taste and adjust

  • Add more lemon → more tang

  • Add more tahini → richer flavor

  • Add more salt → stronger flavor


Step 5: Serve

  1. Spoon into a bowl.

  2. Make a small swirl with a spoon.

  3. Drizzle olive oil.

  4. Add paprika, cumin, or whole chickpeas on top.
